Remember that time I cooked a whole chicken in the crockpot and ended up swearing off cooking it in an oven ever again? No? Because it was last night!
I with kids eating us out of house and home and their sports fees leaving our wallets empty, I have been meal planning my butt off. I had plans to cook a whole chicken knowing I can get multiple other meals out of it but then my work schedule didn’t work with that plan so I had to come up with something.
As usual I turned to Pinterest and what did I find but using my trusty crock pot. My crockpot and I have had an excellent relationship through the years. On really busy days I have even hooked it up to a light timer to turn on while I wasn’t home. Using my crock pot is my thing so this experiment excited me.
The result? Me never ever looking back and in the end swearing off cooking one in the oven ever again. It also left the meat falling off the bone making it really easy for serving as well as taking it apart to be used in other meals this week.
The process was simple, layer your vegetables on the bottom, rub down the chicken with your choice of spices and place on top of the vegetables. Cover and set to low for 8 hours.
